  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat oven to 350F (180C). Prepare a greased springform pan wrapped in foil.
  2. In a bowl, mix graham crumbs, brown sugar, cinnamon, and melted butter. Press into the pan.
  3. Peel and slice apples, mixing them with brown sugar and cinnamon.
  4. Beat cream cheese until smooth; gradually add sugars, cornstarch, vanilla, sour cream, and eggs.
  5. Layer half of the cheesecake filling over crust, followed by half the apple mixture; repeat layers.
  6. Bake in a water bath for about 55 minutes until slightly jiggly in center.
  7. Cool in oven for one hour; refrigerate for at least four hours before serving.
