  • 1/2 cup butter (softened)
  • 2/3 cup granulated sugar
  • 2 eggs (room temperature)
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk (room temperature)
  • 2 large apples (peeled and chopped)
  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F and prepare a 9×5-inch loaf pan.
  2. In a bowl, mix chopped apples with brown sugar and cinnamon; set aside.
  3. Cream together softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well. Stir in vanilla.
  4. In another bowl, combine flour and baking powder; gradually add to wet mixture alternately with milk.
  5. Fold half the apple mixture into the batter. Pour half into the loaf pan, layer on remaining apples, then top with remaining batter.
  6. Bake for about 55 minutes until golden brown and a toothpick inserted comes out clean.
  7. Cool before glazing with powdered sugar mixed with milk.
