  • 500g carrots
  • 2 tbsp balsamic vinegar
  • 100g Puy lentils
  • 400g vegan yogurt
  • 20g tahini
  • 1 orange
  • Olive oil
  • Maple syrup
  • Ground cumin
  • Thyme
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 200C.
  2. Cook lentils in boiling water for 25-30 minutes until tender. Spread on a baking tray, season with cumin and olive oil, then roast for 25 minutes until crispy.
  3. Cut carrots lengthwise into sticks, toss with olive oil, salt, and pepper. Roast for 20 minutes.
  4. Mix balsamic vinegar, olive oil, and maple syrup; drizzle over carrots after initial roasting. Add thyme and roast for an additional 15-20 minutes.
  5. Combine tahini with yogurt and orange juice; season to taste.
  6. Serve by layering yogurt sauce, lentils, roasted carrots, toasted pecans, and fresh herbs.
