  • 1 cup carton egg whites or 7 large egg whites, room temperature
  • 1 1/2 cups buttermilk, room temperature
  • 2 Tbsp vegetable or canola oil
  • 2 tsp vanilla extract or vanilla bean paste
  • 3 cups (6 sticks) unsalted butter, room temperature
  • 1 Tbsp vanilla extract or vanilla bean paste
  • 1 1/2 tsp fine salt
  • 10 cups powdered sugar
  • 1/2 cup heavy whipping cream, room temperature
  • 1 cup cookie butter
  • 1/4 cup heavy whipping cream, room temperature
  • 12 Biscoff cookies (cut into small pieces)
  • 1 cup cookie butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round baking pans and line them with parchment paper.
  2. In a large bowl, whisk together flour, sugars, baking powder, cinnamon, and salt.
  3. In another bowl, cream the butter until fluffy then gradually mix in the dry ingredients.
  4. Add egg whites one at a time, followed by buttermilk and vanilla. Mix until smooth.
  5. Divide the batter between pans and bake for about 25-30 minutes or until a toothpick comes out clean.
  6. Cool completely before frosting with a mixture of softened butter, powdered sugar, cookie butter, and vanilla.
