  • 2 cups all-purpose flour
  • 1/3 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup vegetable oil
  • 1 cup Greek yogurt
  • 1.5 cups fresh blueberries
  • 6 oz cream cheese (room temperature)

Instructions

  1. Preheat oven to 425°F and line a muffin tin with paper liners.
  2. Toss half the blueberries with flour to prevent sinking.
  3. In a small bowl, mix flour, sugar, and salt for the crumb topping; add melted butter until coarse crumbs form.
  4. Combine dry ingredients in one bowl and wet ingredients (egg, sugars, yogurt, oil) in another; mix gently.
  5. Fold in floured blueberries and prepare cream cheese filling by mixing cream cheese, sugar, corn starch, and vanilla until smooth.
  6. Spoon muffin batter into liners, add cream cheese filling in the center, top with reserved blueberries and streusel crumbs.
  7. Bake at 350°F for 22–25 minutes until golden brown.
