  • ¼ cup granulated sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp nutmeg
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1½ tsp vanilla extract
  • 3 medium carrots (grated)
  • ½ cup spiced pecans (chopped)
  • ⅓ cup shredded sweetened coconut
  • 1¼ cup flour
  • ¾ cup instant oats
  • 4 oz cream cheese (for filling)
  • 4 tbsp powdered sugar
  • ½ tsp vanilla extract (for filling)
  • 1 tsp orange zest

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix browned butter, sugars, and egg until smooth. Stir in spices and vanilla.
  3. Add grated carrots, flour, chopped pecans, and oats; mix until combined.
  4. Scoop dough onto the baking sheet with space between each scoop.
  5. Bake for 12–15 minutes until golden brown; let cool on a wire rack.
  6. For the filling, beat cream cheese with powdered sugar and vanilla until smooth.
  7. Once cooled, spread cream cheese filling between two cookies to assemble.
