  • 1 cup half-and-half
  • 4 cups cooked, diced or shredded chicken
  • 2 cups Bisquick
  • ½ cup grated sharp cheddar cheese
  • ⅓ cup butter
  • 1 cup chopped onion
  • 1 cup peeled and chopped carrots
  • 1 cup chopped celery
  • ½ cup flour
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ½ cup frozen peas
  • -¾ cup cold buttermilk
  • ¼ teaspoon dried parsley
  • 2 tablespoons butter (melted)
  • ⅛ teaspoon garlic powder

Instructions

  1. In a large pot, melt butter over medium heat. Add onion, carrots, and celery; sauté until softened.
  2. Sprinkle flour over vegetables; stir for about 2 minutes. Gradually whisk in chicken broth and half-and-half until smooth. Bring to a simmer.
  3. Add cooked chicken and frozen peas; combine well. Season with salt and pepper.
  4. In a separate bowl, mix Bisquick with cold buttermilk until just combined. Fold in cheddar cheese, parsley, melted butter, and garlic powder.
  5. Pour the chicken mixture into a baking dish and drop spoonfuls of biscuit dough on top.
  6. Bake at 400°F (200°C) for about 22 minutes until biscuits are golden brown.
