  • 5 strips bacon
  • 1 lb. boneless, skinless chicken breast (or 2 cups rotisserie chicken)
  • 4 cups chicken broth
  • 1 small yellow onion
  • 2 cups half-and-half
  • 1 lb. Yukon gold potatoes
  • 1 (15 oz.) can sweet kernel corn
  • Jalapeno peppers (to taste)
  • Red bell pepper
  • Garlic

Instructions

  1. Cook the bacon in a large pot over low heat until crispy; set aside.
  2. In the same pot, sauté diced onions in bacon drippings until softened. Add butter, jalapenos, red bell pepper, and garlic; cook until fragrant.
  3. Sprinkle flour into the vegetable mix and cook for two minutes.
  4. Gradually stir in the chicken broth mixture and bring to a boil.
  5. Add seasoned chicken breasts; simmer for 15–20 minutes until cooked through.
  6. Stir in diced potatoes and cook until tender.
  7. Return chopped chicken and corn to the pot; heat through.
  8. If desired, add cheddar cheese until melted before serving.
