  • 1 1/2 lb chicken breast
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 3 cups heavy cream
  • 12 oz shredded Parmesan cheese
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp Gluten Free 1:1 Flour
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Boil water in a large pot and cook the gluten-free farfalle pasta according to package instructions until al dente. Drain and set aside.
  2. In a small bowl, mix paprika, oregano, garlic powder, thyme, salt, and black pepper.
  3. Pound the chicken breasts slightly to thin them out and season generously with the spice mix.
  4. Heat olive oil in a skillet over medium heat and sear the chicken for about 5 minutes on each side. Reduce heat to medium-low and cover the skillet; cook until internal temperature reaches 165°F (about 10–12 minutes). Transfer chicken to a cutting board.
  5. In the same skillet, melt butter and add dry shallots, garlic powder, and Italian seasoning; simmer for one minute.
  6. Stir in gluten-free flour until combined; then add chicken broth and heavy cream while whisking until smooth. Mix in the shredded Parmesan cheese until melted.
  7. Toss cooked pasta into the sauce; if needed, add reserved pasta water until desired consistency is reached.
  8. Slice cooked chicken and return to the pasta mixture; stir gently before serving warm.
