  • 2 packages (6 oz each) ramen noodles (seasoning packets discarded)
  • 1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 1 red bell pepper (sliced)
  • 1 cup snap peas
  • 1 carrot (julienned)
  • 3 cloves garlic (minced)
  • 1 tbsp ginger (minced)
  • 3 green onions (sliced, white and green parts separated)
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/4 tsp white pepper

Instructions

  1. Boil the ramen noodles in a pot of water until slightly undercooked (about 2 minutes). Drain and set aside.
  2. In a small bowl, mix soy sauce, oyster sauce, sesame oil, sugar, and white pepper to prepare the sauce.
  3. Heat vegetable oil in a wok or large skillet over high heat. Add chicken and stir-fry until golden brown (5-6 minutes). Remove from pan.
  4. In the same pan, add remaining oil and stir-fry bell pepper, snap peas, and carrot for about 2-3 minutes until crisp-tender.
  5. Add garlic, ginger, and green onion whites; stir-fry for another 30 seconds.
  6. Combine cooked chicken and noodles with vegetables in the pan. Pour in the sauce and toss everything together for another 2-3 minutes until heated through.
  7. Serve hot garnished with green onion tops.
