  • 1 pound boneless, skinless chicken breasts, sliced
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced (red, yellow, or green)
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 green onions, sliced
  • 1/2 cup soy sauce (or tamari)
  • 1/4 cup honey (or maple syrup)
  • 2 tablespoons rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 2 teaspoons cornstarch mixed with 2 tablespoons water

Instructions

  1. Boil water in a pot and cook noodles according to package instructions until al dente. Drain and set aside.
  2. In a large skillet or wok over medium-high heat, add vegetable oil. Once hot, add sliced chicken and cook for about 5-7 minutes until golden brown.
  3. Add bell peppers, broccoli, and carrot to the skillet. Stir-fry for about 3-5 minutes until vegetables are tender-crisp.
  4. In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, garlic, ginger, and cornstarch mixture. Pour over chicken and veggies in the skillet.
  5. Stir well to coat everything in the sauce and simmer for another 2-3 minutes until thickened slightly. Toss in cooked noodles to combine thoroughly.
  6. Garnish with green onions and sesame seeds if desired before serving warm.
