  • 1 large apple (peeled and chopped)
  • 1/2 cup light brown sugar
  • 1-1/2 teaspoons ground cinnamon
  • 3/4 cup confectioners’ sugar (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8.5 x 4.5 inch loaf pan by greasing and flouring it.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, beat softened butter, granulated sugar, and vanilla until smooth. Add eggs one at a time.
  4. Gradually mix in the dry ingredients alternating with milk until just combined.
  5. In a separate bowl, combine chopped apple with brown sugar and cinnamon.
  6. Layer half the batter in the pan, sprinkle half the apple mixture, then swirl gently with a knife. Repeat layers.
  7. Bake for 45-55 minutes until a toothpick comes out clean.
  8. Cool for 15-20 minutes before glazing with confectioners' sugar mixed with water and cinnamon.
