  • 3/4 cup graham cracker crumbs
  • 1 tbsp sugar
  • 3 tbsp unsalted butter, melted
  • 1 cup cottage cheese (2% or any kind)
  • 1/4 cup Greek yogurt
  • 1 large egg
  • 2.5 tbsp sugar
  • 1.5 tbsp flour or cornstarch
  • 1/2 tsp vanilla extract
  • 1/2 tsp lemon zest
  • Optional: fresh fruits, granola

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan.
  3. Blend cottage cheese until smooth; mix in Greek yogurt, egg, sugar, flour/cornstarch, vanilla extract, and lemon zest until combined.
  4. Pour filling over crust and bake for about 30 minutes until set but slightly jiggly.
  5. Cool at room temperature for an hour before refrigerating for at least two hours.
  6. Top with desired fruits or granola before serving.
