  • 6 tablespoons milk (unsweetened almond milk recommended)
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • 3/4 cup cold coffee
  • 18 ladyfingers
  • 1 tablespoon cacao powder for garnish

Instructions

  1. Rinse cottage cheese in a fine mesh sieve under cold water to remove excess salt. Drain for a few minutes.
  2. In a high-speed blender, combine cottage cheese, milk, maple syrup, and vanilla extract. Blend until smooth, about 2-3 minutes.
  3. Prepare a 9 x 5 loaf pan and dip ladyfingers in cold coffee briefly before placing them in the pan.
  4. Layer one-third of the cottage cheese mixture over the ladyfingers. Repeat with two more layers.
  5. Cover tightly with tin foil and refrigerate for at least 4 hours or overnight.
  6. Before serving, dust with cacao powder and slice into six portions.
