  • 8 ounces medium pasta shells
  • 1 pound ground beef
  • 1 small sweet onion (diced)
  • 5 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 2 tablespoons all-purpose flour
  • 1 cup beef stock
  • 1 (15oz) can marinara sauce
  • 3/4 cup heavy cream
  • 1/4 cup sour cream
  • 1 1/2 cups cheddar cheese (freshly grated)
  • Kosher salt and freshly ground black pepper (to taste)

Instructions

  1. Cook the pasta according to package instructions in salted boiling water; drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned; drain excess fat.
  3. Sauté diced onion for about 2 minutes, then add minced garlic and cook until fragrant.
  4. Whisk in flour until lightly browned, then gradually add beef stock and marinara sauce along with seasonings.
  5. Bring to a boil, reduce heat, simmer for 6-8 minutes until slightly thickened.
  6. Stir in cooked pasta and reserved beef.
  7. Add heavy cream; mix until heated through.
  8. Incorporate sour cream until well combined and finally fold in cheddar cheese until melted.
  9. Serve hot, garnished with parsley if desired.
