  • 1 lb boneless skinless chicken breasts
  • 1 yellow onion
  • 2 cloves garlic
  • 24 oz low sodium chicken broth
  • 2 cans great Northern beans
  • 2 cans diced green chiles
  • 1 can whole kernel corn
  • 4 oz reduced fat cream cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 3/4 tsp oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper

Instructions

  1. Place chicken in the slow cooker; season with salt, pepper, cumin, oregano, chili powder, and cayenne.
  2. Add diced onion, minced garlic, beans, green chiles, corn, chicken broth, and cilantro. Stir well.
  3. Cover and cook on LOW for 8 hours or HIGH for 3-4 hours until chicken is cooked through.
  4. Shred the cooked chicken and return to the slow cooker.
  5. Stir in cream cheese and half-and-half; cook on HIGH for an additional 15 minutes until creamy.
