  • 12 sheets uncooked lasagna noodles
  • 4 cups fresh spinach (washed and chopped)
  • 2 cups sliced mushrooms (cremini or button)
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 3 cloves minced garlic
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté sliced mushrooms for about 5-7 minutes until golden brown.
  3. Add minced garlic and sauté for another minute. Season with salt and pepper.
  4. Mix in chopped spinach and cook until wilted (3-4 minutes). Set aside.
  5. In a mixing bowl, combine ricotta cheese, heavy cream, half of the grated Parmesan, salt, and pepper until smooth.
  6. In a baking dish, layer with ricotta mixture, noodles, vegetable mix, mozzarella cheese; repeat layers.
  7. Top with remaining noodles and cheeses.
  8. Cover with aluminum foil and bake for 25 minutes; then uncover and bake for an additional 15-20 minutes until golden brown.
  9. Allow to rest for 10-15 minutes before serving.
