  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar

  • 1 egg (room temperature)
  • 2 & 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 5 oz pumpkin puree
  • 3 oz cream cheese (softened)
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • Orange gel food coloring

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. Gradually add flour, salt, and baking powder; mix until just combined.
  5. Scoop out dough into balls on the prepared baking sheet and flatten slightly. Press down in the center for filling space.
  6. Bake for 8-9 minutes until lightly golden around the edges.
  7. Allow cooling on the baking sheet before transferring to a wire rack.
