  • 1 cucumber (finely chopped)
  • ½ cup mayonnaise
  • ½ cup sour cream or plain Greek yogurt
  • ½ tbsp minced garlic
  • ½ tbsp dill seasoning
  • Juice and zest from one lemon
  • ½ red onion (finely diced)
  • 1 cup fresh spinach (chopped)
  • Salt to taste

Instructions

  1. Boil water in a large pot and cook pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together mayonnaise, sour cream or yogurt, garlic, dill seasoning, salt, lemon juice, and zest.
  3. Prepare vegetables: finely dice the red onion and chop spinach. Add chopped cucumber to the bowl.
  4. Combine cooled pasta with the tzatziki dressing and mix gently until well coated.
  5. Chill in the refrigerator for at least 3 hours before serving.
