  • 2 cups cooked and shredded chicken
  • 1 can (10 oz) red enchilada sauce
  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Vegetable oil for sautéing
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add vegetable oil and sauté chopped onion and minced garlic until softened.
  3. Stir in shredded chicken along with cumin, chili powder, salt, and pepper; cook for an additional 5 minutes.
  4. Spread some enchilada sauce on the bottom of a baking dish. Fill each tortilla with the chicken mixture and roll tightly; place seam-side down in the dish.
  5. Pour remaining sauce over the rolled enchiladas and sprinkle with cheese. Cover with foil and bake for 20-25 minutes; remove foil and bake for an additional 5-10 minutes until bubbly.
