  • 2 packs instant ramen noodles (without seasoning)
  • 1 cup colorful bell peppers, chopped
  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tbsp honey or sugar
  • 1 tsp fresh ginger, grated
  • 2 tbsp toasted sesame seeds

Instructions

  1. Cook ramen noodles in boiling water for about 3 minutes until tender. Drain and rinse with cold water.
  2. While noodles cool, chop bell peppers and cucumber; shred carrots.
  3. In a large mixing bowl, combine cooled noodles with all chopped vegetables.
  4. Whisk together soy sauce, rice vinegar, sesame oil, honey (or sugar), and grated ginger in a small bowl.
  5. Pour the dressing over the noodle mixture and toss gently to coat. Sprinkle toasted sesame seeds on top before serving.
