  • 1 can corn (15.25 oz, undrained)
  • 1 can Rotel tomatoes (10 oz, undrained)
  • 1 package ranch dressing mix
  • 1 tsp cumin
  • 1 Tbsp chili powder
  • 1 tsp onion powder
  • 8 oz light cream cheese
  • 2 chicken breasts

Instructions

  1. Drain and rinse black beans; set aside.
  2. Place chicken breasts at the bottom of the slow cooker and layer with corn, Rotel tomatoes, and black beans.
  3. Sprinkle cumin, chili powder, onion powder, and ranch dressing mix over ingredients; stir gently.
  4. Place cream cheese on top without stirring in. Cover and cook on low for 6–8 hours.
  5. After cooking, shred chicken with two forks and stir back into the chili mixture before serving hot.
