  • 1 ½ cups dried orzo pasta
  • 1 medium English cucumber, diced
  • 1 large tomato or 8 ounces halved cherry tomatoes
  • ½ cup coarsely chopped fresh herbs (parsley, cilantro, basil, dill, mint)
  • ½ cup pitted olives, halved
  • 1 cup canned artichoke hearts, drained and chopped
  • ¼ cup olive oil
  • 1 teaspoon Dijon mustard
  • ½ teaspoon honey/maple syrup
  • lemon zest & juice

Instructions

  1. Cook the orzo in salted boiling water until tender (6-10 minutes). Drain and set aside.
  2. In a large bowl, whisk together olive oil, Dijon mustard, honey/maple syrup, lemon zest and juice (start with 2 tablespoons), salt and pepper.
  3. Add the drained orzo to the dressing and mix well. Let it cool for about 5 minutes.
  4. Stir in cucumber, tomatoes, herbs, olives, and artichokes.
  5. Taste and adjust seasoning if necessary. Serve immediately or refrigerate for about an hour before serving.
