  • 1/2 cup pumpkin puree
  • 2 teaspoons pumpkin spice
  • 1 (9-inch) graham cracker crust

Instructions

  1. Preheat the oven to 325°F.
  2. In a large mixing bowl, beat together cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  3. Remove 1 1/3 cups of the batter and spread it into the bottom of the graham cracker crust.

  5. Bake for 35-40 minutes until the edges are set but the center still jiggles slightly.
  6. Allow to cool at room temperature for about an hour before refrigerating for at least 3 hours or overnight.
