  • 1 medium onion (diced)
  • 2-3 garlic cloves (minced)
  • 1 pound lean ground beef
  • 1½ cups cooked brown rice
  • 14.5 ounces diced tomatoes (1 can)
  • 7 large bell peppers (tops and cores removed)
  • 1 cup shredded cheddar jack cheese

Instructions

  1. Preheat the oven to 375°F.
  2. In a large pan over medium heat, sauté diced onion in olive oil until softened; add minced garlic and cook for an additional minute.
  3. Add ground beef; cook until no longer pink, breaking it apart with a wooden spoon (about 5–6 minutes).
  4. Stir in cooked brown rice, diced tomatoes, and spices; allow to simmer for 4–5 minutes.
  5. Generously stuff each bell pepper with the beef mixture and place them upright in a baking dish.
  6. Bake for about 10–12 minutes until peppers are tender.
  7. Sprinkle cheese on top and return to the oven for another 5–7 minutes until melted.
