  • 1.5 pounds ripe tomatoes
  • 1 cup fresh basil leaves
  • 2-3 cloves garlic
  • 3 tablespoons extra virgin olive oil
  • Salt
  • Black pepper
  • Balsamic glaze
  • Dried oregano
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper; cook until golden brown on both sides (about 6-7 minutes each side). Ensure internal temperature reaches 165°F (75°C). Remove from heat and let rest before slicing.
  2. While chicken cooks, chop tomatoes into bite-sized pieces, mince garlic finely, cube or tear mozzarella cheese, and roughly chop basil leaves.
