  • 56 g butter
  • 2 large eggs
  • 100 g caster sugar
  • 90 g demerara sugar
  • 85 g chocolate chips

  1. Preheat the oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heat. Line a baking tray with parchment paper.
  2. Melt the dark chocolate and butter in a heatproof bowl over simmering water; stir in vanilla extract.
  3. In another bowl, whisk eggs and sugars on high speed until light and fluffy (about 5 minutes).
  4. Sift together flour, cocoa powder, baking powder, and salt in a separate bowl; add chocolate chips.
  5. Gently fold the melted chocolate mixture into the whipped egg mixture until combined.
  6. Fold in the dry ingredients until just combined.
  7. Scoop batter onto the lined tray; bake for 12-14 minutes until set and crackly on top.
