  • 1.5 pounds baby Yukon Gold or red potatoes (halved)
  • 4 cloves garlic (minced)
  • ⅓ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine chicken with Italian seasoning, smoked paprika, salt, pepper, and 1 tablespoon olive oil.
  3. In another bowl, mix halved potatoes with 3 tablespoons olive oil, minced garlic, salt, pepper, and half of the Parmesan cheese.
  4. Spread seasoned potatoes on one side of a baking sheet; place chicken on the other side.
  5. Bake for 25-30 minutes until chicken reaches 165°F (75°C). Stir halfway through.
  6. Sprinkle remaining Parmesan over both chicken and potatoes; bake for an additional 2-3 minutes until cheese melts.
  7. Garnish with chopped parsley before serving.
