  • 1 clove garlic, pressed
  • 1/4 cup fresh chopped dill
  • 1 1/2 tsp. red wine vinegar
  • 1 1/2 tsp. dried oregano
  • 1 tsp. kosher salt, plus more to taste
  • Fresh ground black pepper

Instructions

  1. In a small bowl, marinate thinly sliced red onions with olive oil, red wine vinegar, and dried oregano. Let them sit while you prepare the rest.
  2. Place sliced cucumbers in a large salad bowl.
  3. In another bowl, mix Greek yogurt, lemon juice, pressed garlic, chopped dill, salt, and pepper until well combined.
  4. Add the yogurt mixture to the cucumbers along with the marinated onions (including liquid) and toss everything together.
