  • 2 lbs boneless skinless chicken thighs
  • 1/2 cup fresh cilantro
  • 1/2 cup fresh Italian parsley
  • 1 tablespoon fresh oregano
  • 1 small shallot
  • 2 cloves garlic
  • 1/2 jalapeño pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1/2 cup olive oil
  • Salt and pepper

Instructions

  1. Prepare the chimichurri by blending cilantro, parsley, oregano, shallot, garlic, jalapeño, lemon juice, red wine vinegar, olive oil, salt, and pepper in a food processor until finely chopped.
  2. Place chicken thighs in a baking dish. Season with salt and pepper and coat with 1/4 cup chimichurri sauce. Marinate for at least 20 minutes (up to 24 hours).
  3. Preheat the grill to medium-high heat. Grill chicken for about 5–6 minutes per side or until juices run clear (165°F internal temperature).
  4. Serve topped with additional chimichurri sauce.
