  • 2 cups whole milk (or half-and-half)
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese

  1. Peel and cube the potatoes into ½-inch pieces; rinse under cold water.
  2. In a large pot, melt butter over medium heat; sauté chopped onion for 5–7 minutes until softened.
