  • 4 boneless, skinless chicken breasts
  • 1 cup crumbled feta cheese
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together honey, olive oil, red wine vinegar, garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken in a resealable bag or dish and pour marinade over it. Seal or cover and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat the oven to 400°F (200°C). Remove chicken from marinade and discard excess.
  4. Place chicken in a baking dish and top with feta cheese.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and feta is golden.
  6. Let rest for 5 minutes before serving.
