  • 1 pound Italian sausage
  • 4 strips bacon
  • 4 cans (14 oz) cannellini beans (drained)
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 small carrots (peeled & chopped)
  • 2 cups fresh baby spinach
  • 4 cups chicken broth
  • Italian seasoning
  • dried rosemary
  • salt
  • pepper

Instructions

  1. In a large soup pot, cook the Italian sausage and bacon over medium-high heat until crispy. Remove and set aside.
  2. Sauté chopped onion in remaining fat for 3-5 minutes; add minced garlic and cook for an additional 30 seconds.
  3. Stir in drained beans, chicken broth, Italian seasoning, and rosemary; scrape up any brown bits from the pot.
  4. Remove from heat and purée part of the soup using an immersion blender for desired texture.
  5. Return meats to the pot with chopped carrots; bring to a boil then reduce heat to simmer for 15-20 minutes.
  6. Stir in fresh spinach until wilted; season with salt and pepper as needed before serving.
