  • 1 pint cherry tomatoes (halved)
  • 1 pound Genoa salami (cubed)
  • 8 ounces fresh mozzarella cheese pearls
  • ½ cup kalamata olives
  • ½ cup pepperoncini (sliced)
  • ½ cup red onion (chopped)
  • Fresh parsley (chopped)
  • ½ cup extra virgin olive oil
  • ½ cup red wine vinegar
  • Parmesan cheese
  • 4 cloves minced garlic
  • 2 teaspoons onion powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Prepare the dressing by mixing all ingredients in a mason jar or bowl until well combined.
  2. Cook the tortellini in salted boiling water according to package instructions until al dente; drain and cool.
  3. In a large mixing bowl, combine cucumbers, tomatoes, salami, olives, pepperoncini, artichokes, onions, mozzarella, parsley, and cooled tortellini.
  4. Pour the dressing over the salad mixture and gently fold until evenly coated.
