  • 1 lb ground beef
  • 1/4 cup parmesan cheese
  • 1/4 cup milk
  • 1/2 cup bread crumbs
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 2 tbsp fresh chopped parsley
  • 2 carrots, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 qts chicken broth
  • 1 bag baby spinach or escarole
  • 2 bay leaves
  • 3 tbsp olive oil, to fry meatballs
  • 1 cup orzo or acini de pepe

Instructions

  1. In a mixing bowl, combine ground beef, parmesan cheese, milk, bread crumbs, garlic powder, salt, and parsley. Form small meatballs (about the size of a quarter).
  2. Heat olive oil in a large pot over medium-high heat. Sear the meatballs until golden brown on all sides; set aside.
  3. In the same pot, sauté onions for five minutes until soft. Add carrots and cook for another three minutes; then stir in minced garlic for one minute.
  4. Pour in chicken broth and add bay leaves; bring to a boil. Reduce heat to simmer and return the meatballs to the pot. Let simmer for about 15 minutes.
  5. Stir in pasta and continue to simmer for another 15 minutes until cooked through. Add spinach or escarole; cover for five minutes before serving hot.
