  • 2 cups rotisserie chicken (cooked)
  • 2 medium carrots (diced fine)
  • 1/2 packet Ranch dressing
  • 1 cup Greek yogurt
  • 3/4 cup shredded taco cheese
  • 10 taco-sized flour tortillas

Instructions

  1. In a mixing bowl, combine 1/2 packet of ranch dressing with 1 cup of Greek yogurt until smooth.
  2. Use a food processor to finely dice the carrots and mix them with the ranch dip and 1/2 cup of shredded cheese.
  3. Chop the rotisserie chicken into small pieces and blend it into the mixture until well combined.
  4. Place about 1/4 cup of the filling on each tortilla, sprinkle with cheese, and roll tightly. Seal with cooking spray.
  5. Arrange the taquitos in a single layer in your air fryer basket and cook at 370°F for approximately 8 minutes, turning halfway through.
  6. Garnish with fresh cilantro if desired before serving.
