2 sticks celery (finely chopped)
2 medium carrots (peeled & finely chopped)
1/2 medium onion (chopped)
3 cloves garlic (minced)
1 tablespoon butter
1 tablespoon olive oil
6 cups chicken broth
1.5 pounds uncooked chicken breasts
1 cup uncooked orzo
Juice of 1 tablespoon lemon
Fresh parsley (for garnish)
Salt & pepper (to taste)
Instructions
In a large soup pot, heat butter and olive oil over medium-high heat. Sauté celery, carrots, and onion for about 5–7 minutes until softened.
Add minced garlic and cook for another 30 seconds until fragrant. Stir in flour and cook for an additional minute.
Pour in chicken broth while stirring to dissolve the flour. Add Italian seasoning and uncooked chicken breasts; bring to a boil.
Reduce heat, cover slightly open, and let the soup simmer for 15 minutes.
Stir in uncooked orzo and cook for another 10 minutes or until tender, stirring frequently.
Remove chicken, chop it into bite-sized pieces, return it to the pot along with lemon juice, parsley, salt, and pepper to taste.
