  • 1/2 cup diced onion
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 2 cups macaroni (uncooked)
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk (for cheese sauce)
  • 1/2 tsp salt (for cheese sauce)
  • 1/4 tsp pepper (for cheese sauce)
  • 1/2 tsp paprika
  • 1/2 tsp dry mustard

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine ground beef, onion, breadcrumbs, egg, milk, salt, and pepper. Press into a greased 9×13-inch baking dish.
  3. Bake the meatloaf layer for 20 minutes.
  4. Cook macaroni according to package instructions; drain and set aside.
  5. In a saucepan, melt butter and stir in flour. Gradually whisk in milk until thickened. Add spices and stir in 1.5 cups of cheese until melted.
  6. Mix cooked macaroni with the cheese sauce and pour over the meatloaf layer. Top with remaining cheese.
  7. Bake for an additional 25 minutes or until cheese is bubbly.
