  • 1 container whole-milk ricotta cheese (15 oz., drained)
  • 1/2 cup powdered sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon finely grated orange or lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 box refrigerated pie crusts (2 count)
  • 3 tablespoons turbinado sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup miniature semisweet chocolate chips or chopped pistachios

Instructions

  1. Preheat oven to 425°F.
  2. Lightly flour a surface, unroll pie crusts, sprinkle with turbinado sugar and cinnamon, and roll gently.
  3. Cut out 48 pastry rounds using a 2½-inch cookie cutter and press into ungreased mini muffin tins.
  4. Bake for about 10 minutes until golden brown; cool in pans for 15 minutes.
  5. Beat ricotta, sugars, zest, and vanilla until creamy; transfer to a zip-top bag and refrigerate.
  6. Just before serving, pipe filling into cooled cups and top with chocolate chips or pistachios.
