  • 2 1/4 cups all-purpose flour
  • 1 1/2 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped walnuts
  • 1 cup grated zucchini (wrung out)
  • 2 cups grated carrots
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 3 large eggs
  • 1/2 cup avocado oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and line muffin tins with paper liners.
  2. In a large bowl, whisk together sugar, flour, cinnamon, baking soda, salt, coconut, and walnuts. Stir in zucchini and carrots.
  3. In another bowl, mix applesauce, maple syrup, eggs, avocado oil, and vanilla until smooth.
  4. Pour wet ingredients into the dry mixture and gently fold until just combined.
  5. Fill each muffin liner about three-quarters full and bake for 25 to 35 minutes until a toothpick comes out with a few moist crumbs.
  6. Let cool in the pan for about seven minutes before transferring to a wire rack.
