  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound mushrooms (cremini or button), sliced
  • 3 cups marinara sauce
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach leaves, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Boil lasagna noodles in salted water for about 8–10 minutes; drain.
  3. In a skillet, heat olive oil over medium heat. Sauté onion until translucent, add garlic and cook for another minute.
  4. Add mushrooms, season with thyme, salt, and pepper; cook until tender. Stir in chopped spinach until wilted.
  5. Layer marinara sauce in the baking dish, followed by noodles, half the ricotta mixture, half the mushroom-spinach blend, and one-third of both mozzarella and Parmesan.
  6. Repeat layers and finish with marinara sauce on top. Cover with foil and bake for 25 minutes; uncover and bake for another 10–15 minutes until golden.
