  • 1.5 pounds shrimp (31-40 count, peeled and deveined)
  • 3/4 cup mayonnaise
  • 1/2 cup finely diced celery
  • 1/4 cup finely diced red onion
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Old Bay seasoning
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shrimp with baking soda, salt, and Old Bay seasoning. Let brine for 15–20 minutes.
  2. Fill another bowl with ice water for cooling.
  3. Boil 8 cups of water with lemon juice, then cook shrimp for about 90 seconds until slightly opaque.
  4. Transfer shrimp to the ice bath immediately; drain and pat dry.
  5. In a mixing bowl, combine celery, red onion, dill, mayonnaise, remaining Old Bay seasoning, lemon juice, salt, and pepper. Mix well.
  6. Add cooled shrimp to the dressing mixture and toss gently to coat.
  7. Cover and refrigerate for at least 2 hours before serving.
