  • 4 ounces pasta (penne or rigatoni)
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup diced bell peppers
  • 1/2 cup diced onion
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Optional: 1/4 teaspoon cayenne pepper
  • Optional: 1 cup fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and bell peppers until soft (3–4 minutes).
  2. Add smoked sausage and cook until browned (about 5 minutes).
  3. Stir in Cajun seasoning, garlic powder, and cayenne (if using). Add pasta and chicken broth.
  4. Bring to a gentle boil, then reduce heat to low and cover. Simmer for about 10 minutes or until pasta is al dente.
