  • 4 potatoes
  • 4 zucchini
  • 4 eggplants
  • 1 kg minced beef
  • 800 grams crushed tomatoes
  • 150 grams unsalted butter
  • 1 liter milk
  • 200 grams Kefalograviera cheese
  • 2 cups olive oil for frying
  • 1 tablespoon salt
  • ½ tablespoon pepper
  • 1 cup red wine
  • ½ teaspoon white pepper
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 teaspoon sugar
  • ½ teaspoon thyme
  • 1 teaspoon oregano
  • 3 bay leaves
  • 1 bunch fresh parsley finely chopped
  • 1 cup plain flour
  • 2 egg yolks
  • ½ teaspoon nutmeg

Instructions

  1. Slice vegetables into discs and fry until golden brown; drain on paper towels.
  2. Cook onion and garlic in olive oil until translucent. Add beef and cook until browned.
  3. Stir in red wine and crushed tomatoes along with spices; simmer for 10 minutes.
  4. Prepare béchamel: melt butter, mix in flour, gradually add milk, then stir in egg yolks and cheese until thickened.
  5. Layer potatoes, eggplants, zucchini, meat sauce, and béchamel in a baking dish; bake at 165°C (329°F) for about 40 minutes.
