  • ¾ cup pecan halves (for crust)
  • ¾ cup melted butter
  • ¾ cup light brown sugar
  • 24 ounces full-fat cream cheese (softened)
  • 1 cup sour cream
  • 1 cup sugar
  • 4 large eggs
  • 1 tablespoon all-purpose flour
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 1 ¾ cups chopped pecan halves (for topping)
  • ¾ cup heavy cream
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F and prepare a 9×13 inch baking dish by spraying it with nonstick cooking spray.
  2. In a food processor, combine graham crackers, pecans, and brown sugar until finely crushed. Add melted butter and mix well. Press into the bottom of the prepared dish and bake for 10 minutes.
  3. Clean the processor bowl, then blend cream cheese, sour cream, sugar, eggs, flour, vanilla extract, and salt until smooth. Pour over the baked crust.
  4. Bake for 30-40 minutes until set in the center; let cool slightly.
  5. For the topping, heat chopped pecans, brown sugar, heavy cream, butter, cinnamon, and salt in a saucepan until boiling; stir continuously for about 2-3 minutes.
  6. Pour warm topping over cooled cheesecake and refrigerate for at least 2 hours before serving.
