  • 3 1/2 cups whole milk
  • 1 1/2 cups flour
  • 1/4 tsp. baking powder
  • 4 large eggs
  • 3 1/4 cups sugar
  • 1 tsp. vanilla extract
  • Zest of 2 lemons

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a standard muffin pan for 30 servings by greasing it.
  2. Melt the butter in a saucepan over medium heat, then stir in the milk until warmed.
  3. In a bowl, whisk together flour and baking powder; set aside.
  4. In a mixing bowl, beat the eggs for one minute before gradually adding sugar.
  5. Mix in vanilla extract and lemon zest until combined.
  6. Gradually incorporate the warm milk mixture into the egg mixture while beating on medium speed.
  7. Slowly add the dry ingredients, alternating with the remaining milk mixture until smooth.
  8. Fill each muffin cup about three-quarters full with batter.
  9. Bake for 35–38 minutes or until golden brown edges form and centers are slightly jiggly.
  10. Let cool before removing from the pan.
