  • 1 pound cherry tomatoes
  • 1 head garlic
  • 3 tablespoons olive oil
  • 1 pound pasta (spaghetti or your choice)
  • Salt and pepper to taste
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse and dry cherry tomatoes; place in a mixing bowl.
  3. Cut the top off the garlic head to expose cloves.
  4. Drizzle tomatoes with 2 tablespoons olive oil, season with salt and pepper, and toss.
  5. Line a baking sheet with parchment paper; arrange tomatoes and garlic on it.
  6. Roast for 25-30 minutes until tomatoes are blistered and garlic is soft.
  7. Cook pasta in salted boiling water until al dente; reserve 1 cup pasta water before draining.
  8. Squeeze roasted garlic into a bowl, add tomatoes and juices, and mash together.
  9. Mix in remaining olive oil, adjust seasoning, then combine with pasta, adding reserved water as needed.
  10. Fold in fresh basil before serving topped with Parmesan.
