  • 1 pound lean ground beef
  • 1/4 cup panko bread crumbs
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fresh ground pepper
  • pinch of salt
  • 1 large vidalia onion (diced)
  • 4 ounces sliced white mushrooms
  • 1 teaspoon fresh chopped thyme leaves
  • 1/2 teaspoon garlic powder
  • 2 1/2 tablespoons flour or cornstarch
  • 3 cups beef stock
  • 1 tablespoon butter
  • kosher salt and pepper (to taste)
  • Chopped fresh parsley or chives

Instructions

  1. In a mixing bowl, combine ground beef, panko, tomato paste, Worcestershire sauce, mustard, onion powder, pepper, and salt. Form into four oval patties.
  2. Heat olive oil in a cast iron skillet over medium heat and brown the patties for about 6-7 minutes total. Transfer to a platter.
  3. In the same skillet, sauté onions until translucent; add mushrooms and cook until softened.
  4. Stir in thyme and garlic powder; sprinkle flour over the mixture and cook for one minute.
  5. Gradually pour in beef stock while scraping the pan to incorporate brown bits; bring to a boil.
  6. Reduce heat, add butter, and season with salt and pepper. Return patties to the skillet and simmer for 5-7 minutes until cooked through.
