  • 1 cup dried red lentils
  • 3 cups water
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin powder
  • Olive oil for sautéing

Instructions

  1. Rinse the red lentils under cold water until clear. In a saucepan, combine rinsed lentils with 3 cups of water and bring to a boil over medium heat. Once boiling, reduce heat to low and simmer for about 15 minutes or until soft.
  2. While the lentils are cooking, heat olive oil in a skillet over medium heat. Add the chopped onion, cooking until translucent (about 5 minutes), then add minced garlic during the last minute.
  3. Drain excess water from cooked lentils if needed. In a blender, combine cooked lentils with sautéed onion, garlic, and cumin powder; blend until slightly chunky.
  4. Heat your nonstick skillet over medium heat and lightly grease it with oil or butter. Pour half a cup of the batter per pancake onto the skillet and cook until bubbles form on the surface (about 3-4 minutes). Flip carefully using a spatula and cook until golden brown on the other side (approximately 2-3 minutes).
  5. Serve warm topped with yogurt or your preferred sauce.
