  • 1 medium yellow onion
  • 5 garlic cloves
  • 1 1/4 cups beef broth
  • 2.5 lbs small Yukon Gold potatoes
  • 5 medium carrots
  • Fresh thyme
  • Fresh rosemary
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Sear the chuck roast in olive oil over medium-high heat until browned on both sides (4-5 minutes per side). Transfer to slow cooker.
  2. Sauté onions in remaining olive oil for about 2 minutes; add minced garlic and cook for an additional 30 seconds.
  3. Pour onion mixture over the roast, then add beef broth, Worcestershire sauce, thyme, and rosemary into the pot.
  4. Layer whole potatoes and carrot pieces over the meat and pour remaining broth over them. Season with salt and pepper.
  5. Cover slow cooker and cook on low heat for 8-9 hours until meat is tender.
  6. Remove roast and vegetables from slow cooker; shred meat before serving.
